A resilient dish that provides comfort and family cohesion.

"The bulgur concoction has moved and evolved along with the Kassouni family through Armenia’s vast and expansive history. In the village of Kasoun, by candle light, the dish provided the family warmth and sustenance in cold winter months. Generations later, when their family fled the Ottoman Empire’s systematic ethnic cleansing, they found, in a foreign stretch of Armenia a cheap sack of bulgur grain."
