A home kitchen with a sunlit window

A healing dessert packed with traditional foods and natural sweetness.

"The seeds turned into peeping greens, then they turned into stories. Passersby would look twice at the beautiful space once only just banal. Some stopped to talk, curious to learn more about the project. Beans crept up the side of the fence; corn stood unapologetically tall, and amaranth, with deep magenta seed heads boomed, yes, we are here."

Step 1

Prepare paste

Soak mango in warm water for 15 minutes, then drain. Finely chop all nuts in a food processor and set aside. Process dates and mangoes until it forms a paste. Add chopped nuts, salt, seeds, cayenne, and lime zest. Mix well, shape into balls, and refrigerate.

Step 2

Puff amaranth

Preheat a saucepan with a lid on medium-high heat. Test with a few seeds; they should pop immediately. Evenly spread 1 tbsp of un-puffed amaranth on the saucepan. Cover and shake until all seeds pop. Repeat until you have enough.

Step 3

Coat

Place puffed amaranth in a bowl. Remove balls from refrigerator and roll them in the amaranth until covered.
